The 2005 rum we bottled was produced from molasses and distilled on a column still then matured in once used Bourbon wood for several years before being shipped to the UK for further maturation. Here in damp cool condition it remained until bottling in 2016, lightly filtered and with no colouring or sweetening. The colour is full golden/bronze showing extract from the wood in hot warehousing in Belize, the nose is forward with spice/wood/vanilla to the fore. The palate if full flavoured with much fruit at the beginning, wood and spice in the middle and a powerful finish which lasts well on the tongue. I prefer a slash of water or a good piece of ice to help the enjoyment of drinking this rum.
