This vatting of seven first fill ex-bourbon casks, all filled in November of 2007 opens with aromas of freshly baked Victoria sponge and a little cardamom and peach, a little time in the glass brings out a slightly more floral note reminiscent of Gorse flower. The palate is vibrant, with fresh vanilla and light fruits appearing immediately on the palate, after a couple of seconds a note of toasted almonds develops, with a juicy tangerine flavour on the back palate – a real pleasure. The finish is spicy, offering an array of baking spices and a little mashed banana. Is this the most complex Daftmill release to date?
